Whenever we’re in need of a new recipe (which is once a month thanks to my 101 in 1001 list), we ALWAYS search for something that is Whole 30 compliant. Our go-to recipes will always be Whole 30 compliant if that’s all that we look for. Which isn’t to say were constantly on Whole 30, because we’re not. But they’re safe from dairy and gluten and stuff that makes us feel gross.
All you do is melt the ghee in a sauce pan over medium-high heat, then add all the ingredients minus the chicken and stir together. Pour over chicken in crock pot and cook on low for 4-6 hours. Shred chicken with two forks before serving (I like to let it sit in the sauce for a little bit after it’s shredded).
Serve however you feel like. Baked potatoes, next to potatoes… we love this recipe and it lasts us for a few days. It is so delicious.
This year I’m documenting what happens one little month at a time. It’s on my 101 list and it’s fun to keep track of what we’re doing. I’m sure that in years to come we’ll look back on the little details and be happy that we can remember them 🙂 Cheers to that.

Crap you guys, I’m doing this. I am posting you some inspirational crap on Monday Morning. Who am I? Look, Monday’s are SO HARD. Especially Mondays that are REALLY MONDAY. Like the ULTRA MONDAY Mondays.
Here’s a little motivation for all y’all.
Mondays are FRESH. They’re often struggly, but they are FRESH. You have 1. a whole new day AND 2. a whole new week. Every day is a new day, but you’ve had some time to recharge and now you’ve got the ability to take on this whole unlived week with big, wide, empty arms. Things happened last week. Things happened this weekend. Things happened last night. But you’ve got a whole new set of weekdays to live through, and that stuff is a whole evening or weekend behind you.
NOT ONLY that, but every hour is a reset. The clock comes right back to 0 and you can choose at any point of your day to restart your day. If you’re in desperate need of some change, then sit and wait for the next MINUTE to start. There you have it. A new, fresh, untouched minute. Things might be bad, they might be hard, they might be struggly but once you survive the minute past that thing… you’ll survive another minute… and another… and then it’s been a half hour… then an hour.. then a work day, then a day… then two days.. then a week. and a month. and you. will. run. into. better. things.
If you look down the lane of the race you’re running and you are fearful, insecure, timid, worried, unprepared… then DO SOMETHING. Every precious moment is an opportunity to pick something up or set something down. Stay still until the next new minute and think about what you’re picking up or letting go, and then MAKE. THE. CHANGE. Make that change EVERY MINUTE for a DAY, for a WEEK, for a MONTH…. until the choice requires less of your energy and becomes NORMAL. That’s change. Change smarts on the smallest level, at the millisecond we get sick and tired of _______. Start or stop, but make that decision.
and even if you live today 45 seconds at a time, holding your breath for the next minute and the next hour and the end of the day… you’ll survive. You’ll sleep today off and tomorrow you can choose to hold your breath for 40 seconds at a time and one day you won’t notice the minutes passing by.
Embrace the seconds and minutes beyond what you’ve just passed through. Change the parts that you don’t like. and give yourself a lot of grace if you’ve had a really struggly Monday.

We made it! We did it! and y’all I am FEELING this Friday. I’ve been babysitting overnight for 4 of the last 7 nights and I’m ready to sleep in my own bed and press my ice cold feet against Justen’s legs because he’s legally bound to me and has to put up with me. Marriage is awesome.
So anyway. This is the Fridayest Friday I’ve Fridayed through in a while.
I figured I’d share some of the stuff I’ve been collecting in my phone to share with people. Like… hey, y’all can be my people. You kind of are.
First. Let’s start with pretty much the most WTF thing I’ve seen in a REALLY LONG TIME.
The other day I saw a girl doing a Facebook live video of her preparing her baby’s placenta. It was actually a video of her with her baby’s placenta. I was like… what in THE WORLD could someone be doing with their baby’s placenta? Stupid me and my stupid curiosity, I hit up google. I’m actually judging you if you’ve done this, just saying.
A few weeks ago I left my keys at the coffee shop. When I walked back in, I realized how easy it is to identify my keys because I can be like “oh yeah, it has a mary-kateandashley keychain.” I’m super used to it and suddenly I realized how funny my keychain is. Also, I absolutely bid on (and obviously won) that keychain on eBay.
True story: about a month into dating, I thought I left my keys at a restaurant. I was panicking and remember watching Justen calmly call the restaurant and explain that we were looking for keys with a mary-kateandashley keychain with Disney Princess shoes and I thought… yeah, I think I might marry him. haha.

Yeah, let’s talk about how Printable Happies CONTINUES to be my spirit animal. Like… yes. everything about this. Counting down the days until we go to Nashville (31!!!!!) AND until we’re off of our no spend month so I can buy this bad boy.
Hello did y’all know that Amazon has giveaways? because they do. and on the day I discovered it, I ACTUALLY WON SOMETHING! and not something ultra lame either, I won these earrings that I actually love! I’ve not won anything since, but whatever!
I literally hate pizza, but Justen loves it, so we decided to make pizza. My half was the olive half, and when Justen presented me a piece it was a bunch of sauce and very minimal cheese and I literally lost it. I held it together for like four minutes and then I spent the next two hours crying about how Justen didn’t put cheese to the edge of the pizza. Let’s talk about how fun it must be being married to me.

In December, I had my gallbladder removed and while I hated being in the hospital, I LOVED the recovery week. I had no option but to lay on the couch in my coziest clothes, under my coziest blanket, eat jello and binge watch Grey’s Anatomy. I was forced to just lay there and let my body take care of itself.
Since leaving my ‘regular’ job and balancing a few different streams of income, I’ve had a really hard time knowing how to stop. Some days I’ll babysit from 5:30 pm – 8:30 am, work on Poshmark listing + closet sharing + sourcing from 9:00 am – 5:00 pm and then babysit from 5:30 – 8:30 am. I’ll get home, open up WordPress and try to force myself to squeeze something out. and (shocker…) there’s often nothing to squeeze because I’ve been working for like 36 hours straight.
I have a hard time letting myself rest, because every moment is a potential work hour. I’ve started to brainstorm ways to help myself transition out of “work mode” and into “rest mode” at the end of the day, and I thought I’d share my top 15 with you. I’m always down to hear more, so please drop me a comment with what you do to unwind at the end of the day!
Take a nice warm bath. extra points for a bath bomb.
Go for a walk. Lucie Fink recently shared that she goes on a walk when she gets home for work and it’s blown my mind. What a great way to get in some exercise and fresh air!
Read a book.
Well, not a whole one (unless you have the time!) just read a chapter.
Drink a glass of water
Stand in your kitchen and drink a big glass of water. Don’t chug it, just drink it and take a moment.
Do some stretches
Diffuse some oils.
A good calming blend is equal drops Vetiver, Lavender, Ylang Ylang and Cedarwood. Just don’t close your eyes or else you may find yourself dozing off a bit. If you want a sample of this blend, drop me a message and I’ll send you a sample of this relaxing blend!
Put a few things away.
Don’t go on any major cleaning spree, but if there’s anything out of place that interrupts your space, put it back where it should be. We’re talking minor stuff like an empty water glass or mug or a book.
Put your phone in another room.
If being away from your phone stresses you out, set a 20 minute timer and stay away from your phone for 20 minutes. Take time to just BE with yourself and your space.
Change your clothes
Put on pants that don’t button. y’all know what I mean….
Put on a playlist of relaxing music
Doesn’t have to be Enya. John Mayer ALWAYS does it for me when I just want to unfreakingwind.
Paint your nails
Preferably while diffusing oils and listening to John Mayer… wearing pants without buttons.
Meditate for a few minutes
Use an app like Headspace and spend a few minutes meditating.
Put on a face mask.
Not trying to get ultra into DIY spa mode, but putting on a face mask forces you to just kind of take a breather.
Watch an episode (or two) of your favorite TV show
I put this one at the end because it can become a huge time suck. But there’s absolutely nothing wrong with unwinding by watching a show and diving into the fictional world of other people’s lives and problems.
